Hearty muffin with rolled oats and very low fat.

Recipe Ingredients for Carrot Pineapple Muffins

1 cup wheat flour
1/2 cup white flour
1 cup rolled oats
1 tsp baking powder
2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup honey
1/2 c sugar
1/2 cup applesauce, unsweetened
3/4 cup egg beaters
1 cup crushed pineapple, with juice
1 cup carrot, grated

Recipe Directions for Carrot Pineapple Muffins

  1. Mix dry ingredientsa together, set aside

  2. Mix remaining ingredients together, add to dry ingredients and mix until just combined.

  3. Spoon batter into non-stick muffin pans. (Or use cooking spray.)

  4. Bake at 350° for around 30 minutes or until an inserted toothpick comes out clean.
