fast, easy, pretty healthy. Good way to use up carrots. Good family recipe.

Recipe Ingredients for Carrot Pie

2 cup finely grated carrots
1 1/2 cup uncooked instant rice
1 cup shredded Cheddar cheese
1/2 cup chopped onion
1 teaspoon dried basil leaves
3 cups milk
1 1/2 cup Bisquick
6 eggs
1 teaspoon salt
1/2 teaspoon pepper

Recipe Directions for Carrot Pie

Heat oven to 400F. Grease oval or rectangle casserole dish. Mix carrots, rice, cheese, onion and basil; spread in plate. Beat remaining ingredients until smooth, 15 seconds in blender or food processor on high or 1 minute with hand beater. Pour into plate. Bake until knife inserted between center and edge comes out clean, 30 to 35 minutes. Cool 5 minutes. Great served with low fat sour cream.
