Like pumpkin pie but with carrots

Recipe Ingredients for Carrot pie

1 cup flour
3 tbsp sugar
1/2 tsp baking powder
1 pinch salt
50 g low-fat margarine
1 egg
1 tbsp cold water
1 1/4 pounds carrots
1 can (12 oz) lite evaporated milk
1/2 cup honey
2 eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves

Recipe Directions for Carrot pie

  1. The first 7 ingreds are your pastry - using a processor to form a ball is easier.

  2. Fridge 30 mins before lining your pie dish. Prick the pastry with a fork and bake 10 mins or until partly cooked.

  3. While the pastry is chilling, cook the carrots, run under cold water to cool.

  4. Process with the milk, honey, spices and remaining ingreds.

  5. Pour pie filling into the partially cooked pastry. Cook for 30-45 mins or until the carrot filling sets and looks/feels lightly jelly-like.

  6. If you find the pastry crust is cooking too fast, cover with foil.
