This moist, flavoursome cake needs no adornment and is perfect to enjoy for morning or afternoon tea. Tapioca flour can be purchased at Asian grocers and in the Asian section of larger supermarkets. You may wish to add chopped glace ginger pieces, a small handful of dried cranberries or sultanas, or 2 tablespoons mixed spice as variations to this great flavour base.

Recipe Ingredients for Carrot and Pecan Cake

1 cup Rice Flour, Brown
75 grams Cornflour
1/2 cup Tapioca Flour
2 tsp Cinnamon, Ground
1 tsp Baking Soda
2 tsp Leavening Agents, Baking Powder, Low-sodium
1/2 tablespoons Xanthan Gum
1 cup, packed Sugars, Brown
3/4 cup Pecan Pieces
2 small (5-1/2" long) Carrots
1/2 cup Oil, Vegetable Safflower
3 large egg Eggland's Best Egg
1/2 cup Milk, Nonfat, Fluid

Recipe Directions for Carrot and Pecan Cake

  1. Preheat the oven to 170 degrees Celsius. Grease and line a 20cm x 9cm loaf tin.

  2. Sift together the flours, cinnamon, baking soda, baking powder and xanthan gum three times into a medium bowl (or mix well with a whisk to ensure they are well combined).

  3. Stir in the brown sugar and chopped pecans. Add the grated carrot, oil, egg and milk and mix well with a wooden spoon. Spoon the batter into the tin and smooth the surface.

  4. Bake for about 1 hour or until golden brown (a skewer inserted into the centre should come out clean). Cover with foil halfway through to prevent over-browning. Remove from oven and leave to cool in the tin for 10 minutes before transferring to a wire rack to cool completely
