Very flavoursome and filling soup. Add a handful of noodles for a more substantial meal. Lovely cold or hot.

Recipe Ingredients for Carrot & Orange Soup

2 carrots
1 potato
1 garlic clove
1 onion
1 tbsp coriander or parsley
1 cup orange juice
1 stock cube
600 ml water

Recipe Directions for Carrot & Orange Soup

  1. Peel and then grate potato and carrots. Finely chop the onion and garlic. Squeeze juice from 2 oranges.

  2. Make up stock with the stock cube and water and place in a saucepan with the potato, carrots, onion and garlic. Season to taste. Cover, bring to the boil and leave to simmer for 25-35 minutes.

  3. Add the parsley/coriander and orange juice, heat the soup through and simmer for a further 5 minutes.

  4. Liquidize before serving or serve as it is.
