Recipe Ingredients for Carrot and orange soup

1 (1.5kg) carrots
2 leeks,sliced
2 medium potatoes
2 clove garlic
4 tsp olive oil
1 tsp coriander
1/2 tsp ground cumin
1000 ml stock
600 ml orange juice

Recipe Directions for Carrot and orange soup

  1. Heat the oil in a pan on a medium heat and sweat the leeks for 5mins.

  2. Peel and chop the remaining vegetables and add the remaining ingredients to the pan.

  3. Simmer for 1 hour

  4. Liquidise,season with salt and pepper and serve.
