Orange flavored cupcakes with flecks of carrot. Modified from kayotic kitchen.

Recipe Ingredients for Carrot & orange cupcakes

1/2 cup applesauce
1/3 cup splenda
1/3 cup brown sugar
1 small orange
1 cup all-purpose flour
1 cup grated carrot
1 1/2 tsp baking powder
1 tsp baking soda
4 egg whites

Recipe Directions for Carrot & orange cupcakes

  1. Wash, dry and grate the zest off of 1 orange and squeeze out the juice.

  2. Lightly beat eggs.

  3. Combine applesauce with the brown sugar and orange zest. Add eggs. Mix well. Add carrot and orange juice.

  4. Sieve 1 cup all-purpose flour, 1 1/2 tsp baking powder, 1 tsp baking soda and 1 tsp five-spice powder over the batter. Stir, just enough to incorporate.

  5. Spoon batter into lined muffin tins. Bake at 350F for 20 minutes or until golden brown and a toothpick inserted comes out clean. Cool completely.
