This is an amazing soup that is very filling! It is easy to make and freezes well.

Recipe Ingredients for Carrot, Onion and Ginger Soup

1 lb carrots (peeled and chopped)
4 cloves garlic
1 large onion (chopped)
1 tablespoon fresh grated ginger
4 cups water
2 tablespoons vegetable oil
1 teaspoon coriander
1 pinch salt
1/2 teaspoon ground black pepper
3 vegetable stock cubes
1/4 pound broccoli stem (chopped)

Recipe Directions for Carrot, Onion and Ginger Soup

  1. Sauté onion, ginger and garlic in vegetable oil until slightly browned and translucent.

  2. Bring all ingredients to a boil for 30 minutes.

  3. Remove from heat, puree and serve.
