Recipe Ingredients for Carrot Oatmeal Cookies

1 cup steel cut oats
1 c. boiling water
1/2 c. margarine, softened
1/2 c. brown sugar
1/4 c. white sugar
1 egg
1 tsp. vanilla
1 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. grated carrots, packed
1/2 c. raisins
1/2 c. chopped nuts

Recipe Directions for Carrot Oatmeal Cookies

  1. Turn oven to 350.

  2. Line or grease cookie sheet.

  3. Place oats in bowl and pour hot water over. Stir and cover with a dinner plate and let stand 10 min.

  4. Spread oats on plate and cool 2 min.

  5. Place in freezer until completely cooled - about 10 min.

  6. Combine butter and sugars until fluffy.

  7. Beat in egg and vanilla.

  8. Whisk flour and spices together.

  9. Gradually add to butter until combined.

  10. Incorporate oats, carrots, raisins and nuts into batter.

  11. Drop by spoonful onto sheets, placing 2" apart.

  12. Bake 8-10 min. until centres are set.

  13. Enjoy!
