From Taste of Home. I had these at church and loved them. Excellent. I also tried an alternative recipe with applesauce and some wheat flower. I actually liked those better.

Recipe Ingredients for Carrot Oatmeal Cookies - Original Recipe

1 cup butter, softened
1 cup shortening
1 1/2 cups sugar
1 1/2 cups packed brown sugar
4 eggs
2 teaspoons vanilla extract
2 cups shredded carrots
4 cups quick-cooking oats
3 1/2 cups all purpose flour
2 teaspoons baking soda
2 teaspoons salt
3/4 cups chopped walnuts
1 cup semisweet chocolate chips

Recipe Directions for Carrot Oatmeal Cookies - Original Recipe

  1. In a large mixing bowl, cream the butter, shortening and sugars. Beat in eggs and vanilla. Add carrots; mix well.

  2. Combine the oats, flour, baking soda and salt; add to creamed mixture and mix well. Stir in walnuts and chocolate chips. (I actually stirred them into the flour mixture before I added the creamed mixture). Cover & refrigerate for at least 4 hours.

  3. Drop by rounded tablespoonful 3 inches apart on to baking sheets coated with cooking spray. Bake at 375 for 10-13 minutes (12 worked for me) or until lightly browned. Cool for 2 minutes before removing to wire racks. Yield: 68 cookies. (5.6 dozen)
