Recipe Ingredients for Carrot-Oat Muffins

3/4 cup quick-cooking oats
1 cup low-fat buttermilk
1 1/4 cups unbleached flour
3 tsp baking powder
1/2 tsp salt
1 egg
3 tbsp honey
1/2 cup carrot, finely shredded
1 tsp orange rind, grated

Recipe Directions for Carrot-Oat Muffins

Combine oats and buttermilk in a mixing bowl and let stand for 15 minutes. Beat egg with honey. Meanwhile, combine flour, baking powder, and salt. Stir with egg into the oat mixture. Fold in carrots and orange rind, stirring only enough to moisten all ingredients. Spoon into muffin cups sprayed with low-fat cooking spray. Bake at 400 degrees fahrenheit for 20 to 25 minutes.
