Carrot Oat Muffin Recipe

Lightly sweetened carrot muffin.

Recipe Ingredients for Carrot Oat Muffin


muffin:
1 cup whole wheat flour
3/8 cup white flour
1 cup oats
3/4 cup wheat germ
1/2 cup water, boiling
2 tsp baking soda
1 tsp salt
1/2 tsp cardamom
1 tsp cinnamon
4 tbsp orange juice
1/4 cup applesauce, unsweetened
2 tbsp honey
1 egg
1 tbsp butter without salt
2 tbsp canola oil
1 cup skim milk
3/4 cup brown sugar, packed
1/4 cup white sugar
4 cups carrots, shredded
1 tsp vanilla

topping:
1/4 cup almonds, slivered
1/8 cup oats
1/8 cup raw sugar

Recipe Directions for Carrot Oat Muffin

  1. Soak wheat germ in boiling water.

  2. Mix together remaining dry ingredients for muffin.

  3. Add to dry ingredients all wet ingredients, except carrots and vanilla. Mix well.

  4. When wheat germ has cooled, add to mixture (cool to avoid cooking egg.)

  5. Stir in carrots and vanilla.

  6. Scoop by quarter cup full into sprayed and floured muffin pans.

  7. Bake at 350 for 20 minutes.

  8. Remove from oven and top with almonds, oats and sugar. Return to oven for another 5-10 minutes, until done.
