So if it's CARROT cake, it must be healthy, right? I used low cal margarine, and light cream cheese, but the stats are for regular.

Recipe Ingredients for Carrot Nut Cake

2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp Salt
2 tsp Cinnamon
7/8 cup oil
2 cups sugar
4 eggs
3 cups grated raw carrots
1 cup finely chopped walnuts
250 g Light Cream Cheese
4 cups icing sugar
1/4 cup margarine
2 tsp. vanilla

Recipe Directions for Carrot Nut Cake

  1. Preheat oven to 325F. Grease 9 X 13 pan.

  2. Sift together dry ingredients.

  3. Add sugar gradually to the oil, beating well after each addition. Beat eggs until very light. Gradually beat a little at a time into the oil-sugar mixture; continue beating until the mixture is smooth and fluffy.

  4. Gradually stir the dry ingredients until thoroughly combined. Add the carrots and nuts; mix well. Pour into prepared pan and bake about 60 minutes or until golden brown and top springs back when lightly touched. Allow to cool.

  5. Cream Cream cheese, icing sugar, margarine.

  6. Spread on cooled cake.
