Recipe Ingredients for Carrot-Mushroom Loaf

1 c onion, chopped
4 1/2 c carrots, grated
1 lb mushrooms, chopped
5 eggs
2 cloves garlic
1 c bread crumbs, whole wheat, divided
1 c cheddar cheese, grated, divided
1/4 c butter, divided
1/2 tsp salt
1/4 tsp pepper
1 tsp basil
1 tsp thyme

Recipe Directions for Carrot-Mushroom Loaf

  1. Melt half the butter in a pan and crush garlic into melting butter. Add onions and mushrooms and saute until soft.

  2. Combine the rest of the ingredients, leaving half the bread crumbs and half of the cheese. Add salt, pepper, basil and thyme to taste.

  3. Butter baking dish with half of butter and reserve remaining butter. Spread mixture into pan, sprinkle with remaining bread crumbs, cheese and dot with remaining butter.

  4. Bake at 350 for 30 minutes covered and 5 minutes uncovered (when browned).
