Recipe Ingredients for Carrot Muffins

1 cup whole wheat flour
1 cup oat flour
2 teaspoons baking soda
1 1/2 teaspoon cinnamon
4 ounces soy protien isolate
3/4 tsp salt
6 2/5 grams sweetener
3/4 cup unsweetened applesauce
3/4 cup nonfat milk
4 large egg whites
2 cups shredded carrots
12 cups nonfat milk

Recipe Directions for Carrot Muffins

  1. Preheat to 375.

  2. Line 12 muffin cups with liners and lightly coat them with cooking spray.

  3. Sift together first 7 ingredients.

  4. In another bowl beat together next 3 then fold in the dry ingredients and then the carrots.

  5. Spoon into muffin cups until almost full.

  6. Cook about 18 minutes.

  7. Serve each one with a glass of nonfat milk.
