Carrot cake-style muffins with whole wheat flour. Adapted from joyofbaking.com.

Recipe Ingredients for Carrot Muffins

2 cups whole wheat flour
4 carrots
3 eggs
3/4 cups canola oil
1 tsp vanilla extract
1 cup sugar
1/2 cup raisins
1 apple, peeled
1 1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt

Recipe Directions for Carrot Muffins

  1. Grate carrots and apple into a large bowl. Add eggs, sugar, vanilla, oil, and raisins, and stir well.

  2. In a separate bowl, mix flour, baking soda, baking powder, and salt.

  3. Add the dry ingredients to the wet ingredients, stir until just combined.

  4. Bake in muffin tins at 350 C for 18-20 minutes.
