Tasty, easy to make carrot muffins

Recipe Ingredients for Carrot Muffins

1/4 cup Flax Meal
1/2 cup (not packed) Raisins, Seedless
1 3/4 cup White Flour, Unbleached
3 teaspoon Baking Powder
1 teaspoon Baking Soda
1 tsp Sea Salt
1 tsp Cinnamon, Ground
4 large Egg, Whole
1 cup Vegetable Oil, Canola
3/4 cup, packed Sugars, Brown

Recipe Directions for Carrot Muffins

  1. Combine raisins with enough warm water to cover. Let soak for 15 minutes. Drain raisins, discard water and set raisins aside.

  2. Preheat oven to 350 degrees. Line 18 muffin cups with paper liners.

  3. In a large bowl, sift together flour, baking powder, baking soda, salt and cinnamon. In separate bowl, combine eggs, oil and brown sugar. Beat well.

  4. Combine egg mixture and flour mixture, mixing until just moistened.

  5. Fold in carrots and drained raisins. Spoon into prepared muffin cups.

  6. Bake in preheated oven for 20 - 25 minutes. Let cool
