I use Quaker Low-fat Carrot Muffin mix and add real carrots, seeds, and bran.... This is my best guess at content so I can log it semi-accurately.

Recipe Ingredients for Carrot Muffins-- Not a real recipe!

2 cups flour
2 eggs
1 cup sugar
1 cup oats
3 large carrots
1/2 cup sunflower seeds
3/4 cups pumpkin seeds
1/2 cup wheat bran

  1. Mix all together

  2. Bake at 375 for 20 min.
