Meatless Holiday Meal, family has loved for years (even meat eaters)

Recipe Ingredients for Carrot Loaf

2 cups grated carrots
1 1/2 cups toasted breadcrumbs
1/2 cup chopped walnuts
1 cup diced onion
3 eggs, beaten (or Egg Replacer to equal 3 eggs if vegan)
3/4 teaspoon salt
1 teaspoon sage
2 tablespoons vegetable oil

Recipe Directions for Carrot Loaf

  1. Lightly toss carrots, breadcrumbs, walnuts and onions in a bowl.

  2. Add eggs(or substitute) salt, sage and oil. Mix together.

  3. Pour into greased loaf pan.

  4. Bake 30-45 minutes. Serves 6.
