Recipe Ingredients for Carrot Lentil Soup

1 1/2 c red lentils
5 c chicken stock
2 c water
1/2 c onion, chopped
1 tbsp garlic, minced
1 tsp cumin
1 tsp coriander
1/2 tsp turmeric
1/2 tsp paprika
1 bay leaf
1 c. sweet red pepper, chopped
1 green onion, thinly sliced
2 tbsp cilantro, chopped
2 tbsp lemon juice
1/4 tsp black pepper

Recipe Directions for Carrot Lentil Soup

  1. In large saucepan, combine lentils, stock & water. Bring to a boil over high heat. Skim away froth.

  2. Then stir in onion, garlic, and spices. Reduce heat to med low and simmer, covered.

  3. Add diced carrots & red pepper. Continue simmering covered until carrots are very tender (about 15 - 20 minutes).

  4. Stir in green onions, cilantro, lemon juice & pepper.

  5. Remove bay leaf and serve.
