Recipe Ingredients for Carrot-Lentil Casserole

1 large onion, chopped
1 cup carrots, chopped
3/4 cup dried lentils
3/4 cup brown rice, uncooked
1/2 cup green bell pepper, chopped
1/2 tsp thyme
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp dried sage
1 tbsp garlic
1 cup canned tomatoes (low sodium), undrained
1 cup vegetable broth
3/4 cup feta cheese (reduced fat), crumbled

Recipe Directions for Carrot-Lentil Casserole

  1. Combine all ingredients except cheese in slow cooker.

  2. Cover and cook on high 4 to 5 hours. Top with cheese and garnish wih basil leaves, if desired.
