Easy soup to make and super low in Calories!

Recipe Ingredients for Carrot and Leek Soup

400 g leeks, cut in chunks
400 g carrots, peeled and cut in chunks
2 tbsp margarine
1 medium onion, chopped
3 g thyme
1 l chicken stock
2 cloves garlic

Recipe Directions for Carrot and Leek Soup

  1. Melt margarine in pot. Put onions in and fry for a few minutes

  2. Add garlic, leeks and carrots. Let them sweat for 10 minutes on medium heat with the lid on. Add thyme aswell.

  3. Add the chicken stock. Bring to boil and then cover and simmer for 10 more minutes.

  4. Add salt and pepper to taste.

  5. Once finished blend until smooth.
