Delish.. I use unsalted no fat vegetable broth in lieu of water but cc doesn't have such an item! Probably adds 25 additional calories.

Recipe Ingredients for Carrot ginger tofu vitamix soup

4 carrots
1/8 small onion
1 garlic cloves
1 tsp olive oil
1/8 tsp white pepper
1 tsp fresh ginger
70 grams Silken tofu
2 cups water
1/10 tsp salt

Recipe Directions for Carrot ginger tofu vitamix soup

  1. Place carrots, onion, garlic into blender and secure the lid.secetc variable 1. Turn machine on and slowly increase to variable 4 blend for ten seconds.

  2. Heat oil in small pan and sautéed chopped vegetables until tender, add broth if necessary. Add rest of ingredients, add sautéed Vegetables, slowly increase variable 10 then to high. Blend for 3-4 minutes or heavy steam.
