Recipe Ingredients for Carrot Ginger Soup, Spicy Curried

1/2 T extra virgin olive oil
1 medium onion, chopped
1 lb baby carrots
2 slices+1"+dia Ginger Root
3 c water
1 c orange juice
1/2 T curry powder
1/8 teaspoon ground cayenne pepper
1/2 t Salt
4 oz plain yogurt, non fat

Recipe Directions for Carrot Ginger Soup, Spicy Curried

  1. Preheat medium pot over medium high heat. Add olive oil, butter, onions and carrots and saute 5 minutes.

  2. Add 4 cups chicken stock, curry and cayenne, and about 1 teaspoon salt to the pot.

  3. Bring to a boil, cover and cook until carrots are very tender, about 15 minutes.

  4. Process soup in blender or processor in batches until soup is smooth and carrots are fully pureed.

  5. Return completed soup to the soup pot and place back over low heat.

  6. If the soup is too thick, add remaining stock, up to 2 cups, to achieve desired consistency.

  7. Adjust seasonings.

  8. Garnish with yogurtand chives.
