Tasty veggie soup great for cold nights. Turns out great without the squash if you don't have it on hand.

Recipe Ingredients for Carrot Ginger Soup

1 cup, chopped Carrots
1 cup, cubes Yam
1 cup, mashed Squash, Winter, Butternut
2 tsp Ginger Root
0.25 cup, chopped Onions
1 1tsp Olive Oil

Recipe Directions for Carrot Ginger Soup

  1. Saute onions in oil

  2. Add carrots, yam, and squash

  3. Add water or broth to cover

  4. Add ginger

  5. Boil until vegetables are tender

  6. Blend everything until smooth.

  7. Season to taste with salt, pepper and cayenne pepper if desired.
