Carrot Ginger Soup Recipe

Makes 6 servings



Loosely based on an Eating Well basic recipe but I added ginger and orange juice. Would be nice with a garnish of a little sour cream or yogurt and some chopped chives or scallions.

Recipe Ingredients for Carrot Ginger Soup

1 tbsp butter
1 1/2 cups onion, chopped
1 1/2 pounds carrots, chopped (about 5 cups)
2 tbsp ginger, minced
4 cups vegetable broth
1 cup water
1/4 cup orange juice (about 1/2 orange)
1/2 cup half-and-half

Recipe Directions for Carrot Ginger Soup

Saute onions and ginger in butter until translucent, about 10 minutes. Add carrots, broth, water and juice. Simmer for 25 minutes or until carrots are very soft. Cool slightly. Puree in small batches in blender. Return to pot, stir in half-and-half.
