Recipe Ingredients for Carrot Ginger Soup

1 tablespoons olive oil
1/2 cup minced onion
1/4 cup minced ginger
3 cups Fat Free Chicken Broth
4 cups carrots (peeled and sliced about 1 1/2 pounds)
1 cup water
1/2 cup orange juice
1/4 cup Cream, Fluid, Half And Half
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 salt and pepper to taste

Recipe Directions for Carrot Ginger Soup

  1. Heat oil in heavy large saucepan over medium-high heat. Add onion and minced ginger and sauté until onions are translucent (5 minutes).

  2. Add chicken stock, water and sliced carrots. Cover and simmer until carrots are tender (30 minutes).

  3. Remove from heat and puree with immersion blender.

  4. Add orange juice, spices and half and half. Simmer over low heat 5 minutes. Season to taste with salt and pepper.
