This is a lite version of the kind you get in Sushi restaurants. I omitted 1/2 cup veg oil and 1/2 cup water from the original recipe.

Recipe Ingredients for Carrot Ginger Salad Dressing

1/2 pound raw shredded carrots
1/2 pound raw shredded beets
2 tbs soy sauce
2 tbs rice vinegar
1 tbs sesame oil
1/8 cup raw onion
1/2 tbs raw garlic

Recipe Directions for Carrot Ginger Salad Dressing

  1. Shred and blend until very fine.

  2. It helps to shred the carrots and beets with the shred blade, then pulverize with the regular blade.
