Recipe Ingredients for Carrot Ginger Puree

2 pounds carrots, peeled and cut into 1" pieces
1 tablespoon fresh ginger root, peeled and cut in half
2 tablespoons butter, melted
1 orange, juiced
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
2 tablespoons plain yogurt 0% fat

Recipe Directions for Carrot Ginger Puree

  1. Steam peeled and cut carrots and the pieces of peeled ginger for about 12 minutes, until soft.

  2. Drain and transfer to the bowl of a food processor or pot for an immersion blender.

  3. Add melted butter, orange juice, salt and pepper. Puree until smooth.

  4. Add the yogurt and process again. The carrots should be perfectly smooth.

  5. Serve immediately, or return to the pan and keep warm on the stove.
