Vegetarian soup. I added the Sriracha hot sauce for a little more kick and the salt for a little more flavor over original recipe. I think this was actually posted in one of our vegetarian forums. Thanks to whomever originally submitted, turned out very good.

Recipe Ingredients for Carrot Ginger Curry Soup

1 lb. carrots
1/2 onion
1 tbsp curry
1 tbsp cumin
1 tsp turmeric
3 cloves garlic
2 tbsp olive oil
1 tbsp butter
4 cups vegetable broth
1 tbsp ginger, grated
1 tsp cinnamon
1 tbsp salt
1/8 cup sriracha hot chili sauce

Recipe Directions for Carrot Ginger Curry Soup

  1. Boil 1 lb. carrots, cut into bite-size pieces, in water.

  2. While carrots boil, in a separate pot add butter, olive oil, onions, garlic. Saute on low until onions are tender / translucent. Add ginger to saute for last few minutes (add earlier for less spicy soup.)

  3. Drain carrots (okay if not totally soft) and put in pot with oil, etc.

  4. Cook about 5 minutes adding spices as you go.

  5. Add 4 cups vegetable broth.

  6. Bring to boil then reduce heat to warm / low and simmer until carrots are very soft ( 30 min - 1 hour)

  7. Puree the soup (careful it's hot!)
