Delightfully rich, not too sweet, and has a bit of zing from the ginger. Delicious!!!

Recipe Ingredients for Carrot, Ginger, and Coconut Soup

1 tablespoon coconut oil
1 medium onion, diced
8 large carrots, cut into chunks and steamed
1 teaspoon salt
1/4 teaspoon pepper
3 cloves garlic, minced
4 cups vegetable broth
2 tablespoons grated ginger
13 1/2 ounces coconut milk

Recipe Directions for Carrot, Ginger, and Coconut Soup

  1. Saute onions in coconut oil.

  2. Add steamed carrots and salt; cook through.

  3. Season with pepper, add garlic then cook for 30 seconds. Remove from heat.

  4. Transfer carrots to a blender. Add vegetable broth and ginger; blend well.

  5. Return to heat and bring to a boil. Boil for 3 minutes.

  6. Remove from heat and stir in coconut milk.

  7. Add salt to taste.
