Makes 12 servings



Carrot, sultana and honey cake. You could also add 50g of chopped dates if desired, or substitute sultanas for raisins.

Recipe Ingredients for Carrot and Fruit Cake

100 g soft brown sugar
6 tbsp honey
175 g carrot
100 g sultanas
3/4 tspn nutmeg
100 g butter
150 ml water
1 egg
100 g wholemeal flour
100 g plain white flour
2 tspn baking powder

Recipe Directions for Carrot and Fruit Cake

  1. Mix the sugar, honey, carrots, sultanas, nutmeg, butter and water together in a saucepan.

  2. Bring to the boil.

  3. Simmer for 5 minutes.

  4. Turn into mixing bowl and allow to cool.

  5. Stir in the egg.

  6. Mix the flours and the baking powder together and sprinkle over the mixture. Mix throughly.

  7. Turn into a greased and floured 23cm/9-in deep, round cake tin.

  8. Bake for 55-60 minutes or until firm to the touch, at 180C/350F/gas 4.

  9. Cool on a wire rack.
