Great dessert fat-free and low calorie

Recipe Ingredients for Carrot flan

4 egg whites
1/2 cup light soy milk
1 cup carrots
2 tbsp cornstarch

Recipe Directions for Carrot flan

  1. Boil the chopped carrots, about 12 minutes, or until well cooked. Drain them and blend in the food processor until reduced into a puree consistency. Set aside

  2. Turn on the oven to 325F. Fill a large baking pan with water, about half full and place it into the oven. Allow to heat.

  3. Meanwhile, beat egg whites with the hand electric mixer or in the food processor until fluffy. Add milk and carrot puree. Add the cornstarch.

  4. Add 30 drops of your favorite zero calorie liquid sweetener. Here in Italy we have one called "TIC", it's zero calorie, zero carbs and zero fats.

  5. Divide mixture into 4 baking dishes (the creme caramel ones are great). Place into the oven, into the filled with water baking pan. Cook about 30-35 minutes.

  6. Turn off the oven, but don't open it. Leave in the carrot flans to cool about 30 minutes.

  7. Past that time, lightly open the oven and leave it this way for about 15 more minutes.

  8. Remove the carrot flans from the oven and immediately transfer into the fridge.

  9. Allow to chill at least 4-5 hours.

  10. Before serving dust lightly with confectioners' sugar (optional)
