I love this soup!! It is delicous and the fennel gives it a nice, different taste. Blending the soup gives it great texture!

Recipe Ingredients for Carrot and Fennel Soup

2 cups Fennel bulb, thinly sliced (or 1 bulb)
2 tbsp Olive Oil
4 cups Carrots
6 cups Water
1 tsp salt
1/3 cup Orange Juice

Recipe Directions for Carrot and Fennel Soup

  1. Cook fennel in olive oil in a large soup pot over medium heat, stirring often, until it's softened and begins to turn golden.

  2. Add carrots and cook, stirring, for another minute.

  3. Add water and salt, then simmer 20 minutes (or until carrots are very tender).

  4. In blender, puree the soup with orange juice and return to pot. Add salt and peper to taste.

  5. NOTE: If re-heating soup, do it gently.
