mini muffins with fresh carrot, dried apricots, cranberries, raisins

Recipe Ingredients for carrot & dried fruit mini muffins

8 oz flour
6 oz butter
4 oz brown sugar
30 g dried cranberries
3 carrots
30 g dried apricots
30 g raisins
3 eggs
30 ml milk

Recipe Directions for carrot & dried fruit mini muffins

  1. cream butter and sugar together in food processor

  2. add one egg at a time with a tablespoon of sugar 7 whisk, then add rest of flour and milk to loosen mixture

  3. add grated carrots and fruit and mix well

  4. transfer to muffin cases

  5. bake for 15-20 mins 160 degrees Celsius
