Recipe Ingredients for Carrot Date Muffins

1 cup flour
1/2 cup whole wheat pastry flour
1/4 cup wheat bran
1 1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/4 tsp salt
227 grams Greek Yogurt
1/2 cup brown sugar
1 egg
2 tbsp canola oil
1 tbsp vanilla
1/2 cup chopped carrots
1/2 cup chopped dates

Recipe Directions for Carrot Date Muffins

  1. Mix together all the dry ingredients.

  2. Mix together all the wet ingredients.

  3. Combine the wet and dry ingredients.

  4. Stir in the carrots and dates.

  5. Fill into 12 greased muffin tins.

  6. Bake in a preheated 400 degree oven for 15 minutes or until a toothpick comes out clean.
