Perfect recipe for a side salad or for a bento-side. It can be kept in the fridge for several days and stay fresh.

Recipe Ingredients for Carrot and Daikon Salad

1 medium carrot, sliced into inch long thin strips
300 grams daikon, sliced into inch long thin strips
2 teaspoons miso paste
4 teaspoons lemon juice
4 teaspoons soy sauce
2 teaspoons sugar
4 teaspoons sesame seed oil
2 teaspoons sesame seeds

Recipe Directions for Carrot and Daikon Salad

  1. Carefully slice the carrot and daikon into thin strips that are about an inch or so long (you want them cut small to fit well into a bento divider).

  2. Add everything to a mixing bowl (if you want to eat immediately) or a Tupperware container (for fridge ready-ness).

  3. In a separate, small bowl, add all the ingredients for the dressing and mix well.

  4. The miso paste and sugar will take a little bit to dissolve into the rest of the liquids.

  5. Once dissolved, toss the salad with the vegetables (or add dressing to the Tupperware, lid, and shake vigorously for an even-coating) and add the sesame seeds last.
