Carrot Curry Soup - curry, ginger and lots of great veges

Recipe Ingredients for Carrot Curry Soup

2 tbsp vegetable oil
2 tsp curry powder
1 tsp ginger
2 cups carrots
2 stalks celery
1 med onion
1 med potato
5 cups chicken broth
1 tbsp lemon juice
1 tsp salt
1 tsp pepper
1/2 cup plain yogurt

Recipe Directions for Carrot Curry Soup

  1. Heat oil on medium

  2. Saute curry powder and ginger 1 min

  3. Add carrots, celery, onions, and potato

  4. Stirring regularly, add tbsp or 2 of stock if pan get to dry

  5. Add chicken stock

  6. Simmer at low and cover 25-30 min or until veges are very tender

  7. Take off burner and allow to cool uncovered

  8. Stir in lemon juice

  9. Salt and pepper to taste

  10. Puree

  11. Garnish with yogurt
