Carrot Curry Soup with sweet potato

Recipe Ingredients for Carrot Curry Soup

1/2 cup onion
1 teaspoon olive oil
1 tsp curry powder
2 cups sweet potatoes, medium, peeled and diced
5 medium carrots, peeled and diced
3 1/2 cups chicken stock
2 cloves garlic
1/2 cup orange juice
1 tsp orange zest

Recipe Directions for Carrot Curry Soup

  1. Sautee onion, garlic and curry powder in the olive oil.

  2. Cut sweet potato and carrot into this slices.

  3. Add sautee mixture and sliced vegetables to chicken broth and boil until vegetables are tender.

  4. Puree mixture in blender.

  5. Add orange juice and zest before serving.
