Yummy low fat, high fibre, cakes that are so easy to make too!

Recipe Ingredients for carrot Cupcakes

125 g soft brown sugar
150 g applesauce
225 g wholemeal flour, self raising
2 tsp baking powder
2 large eggs
1 orange zest
1 orange juice
50 g sultanas
175 g carrot, grated
1/2 g ground cinnamon
1/2 g ground ginger

Recipe Directions for carrot Cupcakes

  1. Soak the sutanas in the juice of the orange.

  2. Put the sugar, applesauce, flour, baking powder, orange zest, spices and egg into a food processor. Process on high until all the ingredients are blended.

  3. Add the grated carrot, sultanas and orange juice and process on a medium speed untill combined.

  4. Spoon into cupcake cases

  5. Bake in the oven at 160c for 12-14 minutes
