Carrot Cake turning into Cupcakes

Recipe Ingredients for Carrot Cupcakes

1 cup, grated Carrots
3 eggs
3/4 cup buttermilk
3/4 cup vegetable oil
1 1/2 cup sugar
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 cups all-purpose flour
2 teaspoons baking powder
1 cup shredded coconut
1 cup chopped walnuts
8 oz g) Pineapple Chunks in pineapple juice
1 cup raisins
400 g Cream Cheese
500 g Cool Whip
2 cups Icing Sugar

Recipe Directions for Carrot Cupcakes

  1. Preheat oven to 350 and line cupcake pan with liners.

  2. Sift together flour, baking soda, salt and cinnamon in a bowl and set aside.

  3. Combine eggs, buttermilk, oil, and sugar, mix well and add flour mixture and mix well.

  4. Combine grated carrots, coconut, walnuts, raisins, and pineapple chunks in a bowl and fold into batter.

  5. Bake for 1 hour and cool for 30 minutes.

  6. Beat together cream cheese and cool whip, before sifting in icing sugar till icing is form.

  7. Once cupcakes are cooled ice.
