Should read 1/2 teaspoon each of Baking Powder and Bicarb but can't find bicarb in database. Since I can have a whole meal for the calories in one of these they are definitely not an every day treat!

Recipe Ingredients for Carrot Cup Cakes

130 grams flour
1/2 teaspoon baking powder
1/2 teaspoon baking powder
1 teaspoon Cinnamon, Ground
215 grams sugar
2 eggs medium
175 ml vegetable oil
65 grams Walnuts Chopped
165 grams carrots
170 grams cream cheese
65 grams Unsalted Butter
125 grams icing sugar
1 tablespoon lemon zest
3/4 tablespoon Sour Cream
1/2 teaspoon vanilla extract

Recipe Directions for Carrot Cup Cakes

  1. Preheat oven 180C/160C fan/gas 4, line cupcake pan or muffin tin with paper cases

  2. Sift together the plain flour, bicarb, baking powder and cinnamon set aside

  3. Select 14 of the walnut pieces fro decoration and set aside, chop the remainder.

  4. In a large bowl whisk together the sugar and eggs until thick and creamy, Slowly add the oil in a thin stream while whisking constantly. Fold in the dry ingredients, once combined gently stir in the chopped nuts and grated carrots.

  5. Divide the batter evenly between the paper cups and bake 20-25 mins, or until a skewer inserted in the centre of one cup cake comes out clean

  6. For the frosting: in a large bowl, beat together the cream cheese (Philly) butter and icing sugar until the mixture is smooth and soft. Stir in the lemon zest of half a lemon, soured cream and vanilla extract.

  7. Pile the frosting into a piping bag and pipe onto the cooled cupcakes. Decorate with reserved walnut halves before serving.
