Recipe Ingredients for Carrot Cranberry Pecan Muffins

6 serving Flour
400 grams Unbleached Flour
1.5 teaspoon Baking Soda
1 tsp Nutmeg, Ground
1/4 tsp Sea Salt
156 grams Carrots
0.5 cup Sweetened Dried Cranberries Dried Fruit
0.5 cup, chopped Pecans
2 large Egg, Whole
0.5 cup Milk, Reduced Fat, Fluid, 2% Milkfat
4 fl oz Original Almond Breeze Unsweetened
4 oz Greek Yogurt
4 serving Molasses

Recipe Directions for Carrot Cranberry Pecan Muffins

  1. combine flours, baking soda, nutmeg, and salt in large bowl

  2. peal and chop carrots then quickly grate in blender (just a few seconds)

  3. add pecans to blender and quickly chop (just a few seconds)

  4. add cranberries to blender and quickly chop (just a few seconds)

  5. add eggs to blender and quickly blend (just a few seconds)

  6. add milk, almond breeze, yogurt molasses, honey, and oil to blender and quickly blend (just a few seconds)

  7. center rack in oven and heat to 375

  8. lightly spray muffin tins with oil

  9. pour contents of blender into bowl with dry ingredients and stir until just combined

  10. fill muffin tins to about 3/4 full

  11. bake 15-20 minutes

  12. serve warm
