Recipe Ingredients for Carrot Corn Fritters

1/4 cup cornmeal
1/2 cup grated carrot
1 tbs. flax seed
1/4 cup egg white
1 tsp. sesame oil

Recipe Directions for Carrot Corn Fritters

  1. Squeeze some of the excess juice out of the grated carrots.

  2. Mix together carrot, flax seed, and egg white.

  3. Heat oil in a skillet.

  4. Form carrot mixture into 4 flattened balls.

  5. Quickly fry on both sides, not pressing down or they may break apart.

  6. Fry on both sides again, pressing down this time to further flatten and bring the egg white to the surface, until they are brown.
