Carrot & Coriander Soup Recipe

Soup for a lovely appetizer or meal.

Recipe Ingredients for CARROT & CORIANDER SOUP

4 1/2 lb. chopped carrot
2 med. onion
5 clove garlic
2 liter water
1 tbsp. sea salt
3 cups mashed potato
1 1/2 cube chicken stock
1 cup fresh cilantro
1 tsp ground black pepper
1/4 cup unsalted butter

Recipe Directions for CARROT & CORIANDER SOUP

  1. Peel and rough chop the onions, garlic and carrots.

  2. Brown in a large stockpot with non-stick vegetable spray.

  3. Add the water, stock powder or cube, and salt.

  4. Cook until soft, roughly 1/2 hour.

  5. Allow to cool slightly, blend with hand liquidizer in the pot.

  6. Add 2 cups leftover mashed potato (contains the butter). Note: If you do not have mashed potato already prepared, peel, cube and add 3 large potatoes to the first step, and cook along with the carrots. Add the butter at any point.

  7. Stir, heat, season to taste.

  8. Allow to simmer and reduce on very low heat.

  9. Add chopped, fresh cilantro (a.k.a. coriander) prior to serving.

  10. Optional - add curry powder to taste in the last step. Adds a lovely zing to your soup!
