A simple yet tasty and healthy soup.

Recipe Ingredients for Carrot and Coriander Soup

1 tbsp extra virgin olive oil
3 medium onions, coarsely chopped
3 tbsp ground coriander
2 tbsp marjoram
6 cloves garlic
5 large carrots, chopped
8 cups water
8 servings Bovril
1/2 c cilantro, roughly chopped
1/2 tsp cayenne pepper

Recipe Directions for Carrot and Coriander Soup

  1. Heat oil in a pan and sauté the onions until soft, about 5 minutes.

  2. Add coriander, marjoram, and garlic and stir several minutes.

  3. Add carrots, water, and Bovril. Bring to the boil then reduce to a simmer. Cook until carrots are tender, about 30 minutes.

  4. Add cilantro and cayenne pepper.

  5. Purée in a food processor.

  6. NOTE: tender young garlic leaves may be used instead of cloves.
