Recipe Ingredients for Carrot Cobbler

1 box yellow cake mix
28 oz. sliced carrots, canned
1 stick margarine
1 cup egg beaters
1 can fat-free evaporated milk
1 tsp. nutmeg
2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. vanilla
1/4 cup milk, dry, non-fat
1 cup splenda

Recipe Directions for Carrot Cobbler

Drain carrots. Using a mixer, mix carrots, egg beaters, splenda, cinnamon, nutmeg, ginger, salt, dry milk and baking soda. Pour into a greased 9x13 baking dish. Sprinkle the dry cake mix over the pie mixture. Pour the evaporated milk over the mix. Melt the margarine and drizzle over the top. Bake at 350 for 1 hour. Serve warm with fat-free cool whip or cool and serve with the cool whip.
