Simple soup, elegant in flavor and appearance. I add extra cilantro when simmering with the rest of the vegetables.

Recipe Ingredients for Carrot and Cilantro Soup

1 lbs. carrots, preferably young and tender
1 tbsp. sunflower oil
3 tbsp. light margarine or butter
1 small onion, chopped
1/4 cup celery, chopped, plus 2-3 leafy tops
2 small potatoes, peeled
4 cups vegetable stock
3 tsp. ground coriander
1 tbsp. cilantro, chopped
1 cup skim milk
1/2 tsp. salt
1 tsp. pepper

Recipe Directions for Carrot and Cilantro Soup

  1. Trim and peel the carrots and cut into chunks. Heat the oil and 2 tbsp butter in a large saucepan, then saute the onion over gentle heat for 3-4 minutes until slightly softened.

  2. Slice the celery and chop the potatoes. Add them to the onion, cook for a few minutes and then add the carrots. Cook over gentle heat for 3-4 minutes, stirring, and then cover.

  3. Reduce the heat further and sweat for about 10 minutes. Shake the pan or stir occasionally so the vegetables do not stick to the bottom.

  4. Add the stock and bring to a boil. Half-cover the pan and simmer for another 8-10 minutes, until the carrots and potatoes are tender.

  5. Remove 6-8 celery leaves for garnish and finely chop the remaining celery tops (about 1 tbsp chopped). Melt the remaining butter in a small saucepan and saute the ground coriander for 1 minute, stirring constantly.

  6. Reduce the heat, add the chopped celery tops and cilantro and saute for 1 minute. Set aside until required.

  7. Process the soup in a food processor or blender and pour into a clean saucepan. Stir in the milk and the cilantro mixture. Season, heat gently. Serve garnished with the celery leaves.
