Carrot and Cilantro Soup Recipe

Simple soup full of vegetable goodness. Also tastes fine if you choose not to blend it, or with some chicken broth instead of vegetable broth.

Recipe Ingredients for Carrot and Cilantro Soup

2 tablespoons canola oil
3 tablespoons Becel Regular Margarine
1/2 large white onion, chopped
3 stalks celery, sliced
2 medium potatoes, chopped
2 pounds carrots, cut into 1 1/2" chunks
6 cups vegetable broth
3 teaspoons ground coriander
1/4 cup chopped fresh cilantro
1 tsp salt
1 tsp pepper

Recipe Directions for Carrot and Cilantro Soup

  1. Heat oil and butter in a Dutch oven or soup pot over

  2. medium heat. Sauté onion for 3-4 minutes until slightly

  3. softened. Add celery and potatoes to the onion in the pan,

  4. cook for a few minutes and then add the carrots. Sauté for

  5. 3-4 minutes, stirring frequently. Cover, reduce heat to

  6. low and "sweat" vegetables for 10 minutes. Gently shake

  7. the pan or stir occasionally so the vegetables do not stick

  8. to the bottom.

  9. Add the broth, bring to a boil and then cover and simmer

  10. for 10 minutes, or until the carrots and potato are tender.

  11. Remove from heat and cool slightly.

  12. Process the soup in batches in a food processor or blender

  13. until smooth. Return soup to pan, stir in coriander,

  14. cilantro and salt and pepper to taste. Reheat over low

  15. heat and serve immediately.
