Recipe Ingredients for Carrot Chicken Pilaf

1/2 c rice, uncooked
100 g chicken, meat only
1/3 onion, diced
1 carrot, sliced
2 mushrooms, sliced
1 c broccoli florets
1 tsp vegetable oil
1/4 tsp salt
1 clove garlic, minced
1/2 c chicken broth

Recipe Directions for Carrot Chicken Pilaf

  1. in skillet over medium heat, brown chicken in oil. remove, set aside.

  2. add rice, carrot, mushrooms, onion, and broccoli. cook, stirring, until rice begins to toast.

  3. add salt, chicken, chicken broth, italian seasoning, and garlic. bring to boil, reduce heat to a simmer and cook for 15-20 minutes.

  4. uncover, stir, let rest 5 minutes before serving
